I have a WMR headset, not Odyssey, but I have a similar headset by Lenovo. Steam has a ton of things you can mess around with. Some of my favorites are: Star Trek: Bridge Crew, Space Pirate Trainer, Beat Saber and Super Hot. Most of the "free stuff" can be downloaded via steam.
YouTube VR is ok, although the quality of those videos can be kind of bad.
Big Screen VR is really nice. Think of it like a virtual movie theater. Let you play your own media in a virtual environment. I've gotten together with friends a few times and we've watched movies. Kind of a cool thing if you have friends you can't physically see very often.
There's probably a bunch of games in your Steam library that have tacked on VR support. No Man's Sky, the Serious Sam games and Pay Day 2.
You could use Big Screen VR to play mame games, at least I'm pretty sure you could launch mame from within bigscreen VR. But, you'd just be playing it on a giant virtual screen... Haven't seen a proper mame VR application.
